3 Before You Begin... Welcome to the menu profit builder pro online training. This tutorial will show the basic steps required to create a complex menu item. It assumes you have:. Completed pre-work required before entering recipes or menu items. USFood com MPP Guide-Pre-Work.docx defines all steps that should be taken prior to entering recipes or menu items. 2. Reviewed USFood.com MPP -Simple Recipes.docx and/or USFood.com MPP-Complex Recipes.doc These documents explain all of the fields, screens and terminology used in the recipe section of MPP. Definition A complex menu item contains a single serving of recipes and/or products (ingredients) purchased from US Foods or another supplier. It is presented or sold as a single group or plate. Menu items allow you to set a Menu Price so that food cost and gross profit can be automatically calculated based on the cost of ingredients. An example of a complex menu item would be a Lasagna Dinner that contains: One serving of recipe # Lasagna Hilltop Hearth garlic bread Cross Valley Farms Salad Mix Reggiano Parmesan purchased from Non-USF supplier For the exclusive use of US Foods customers and employees Page 3 of 5
4 Creating a complex menu item consists of four steps:. Create the menu item header this is the key information about the new menu item. Ingredients cannot be added until the header is created and saved. Create a complex menu item Overview 2. Add ingredients Since MPP Online is fully integrated with USFood.com, any product stocked by the division can be added as an ingredient. The user adds ingredients to a menu item the same way that they add them to an order by searching the full product catalog or keying in the product number Enter instructions Instructions can be added at any time. You can also add instructions to groups of ingredients. This step also allows inclusion of Critical Control Points (CCP) 3 4. Review completed menu item this is the final step to make sure that the information was entered correctly. For the exclusive use of US Foods customers and employees Page 4 of 5
5 A completed menu item consists of four parts Recipe header this provides key data on the completed recipe, including the total cost per recipe. 2. Cost - Displays the recipe cost by applicable units of measure. 3. Ingredients List of all ingredients used in this recipe, as well as the cost for each. 4. Instructions - Displayed as steps, this section allows the user to provide specific preparation and handling instructions. For the exclusive use of US Foods customers and employees Page 5 of 5
6 Step - Create the menu item header Create a Complex Menu Item Detail. From the main menu on USFood.com, click on Menus. 2. Click on Menu Items The Menu Items list screen will appear. Click on Add New Menu Item The Menu Item Detail screen will appear. 5. Enter the Menu Item Information*. Required fields are marked with a red asterisk. 6. Enter Menu Category, POS #, and Price details. 7. Click on Save Menu Item to save the menu item header. The header must be saved before the user can add ingredients or recipes For the exclusive use of US Foods customers and employees Page 6 of 5
7 Once Save Menu Item is clicked, the following screen changes will occur: 8. Search options will appear 9. The Save Menu Item button will disappear The Current Ingredients/Recipes box will appear. Ingredients can now be added to the menu item. 0 For the exclusive use of US Foods customers and employees Page 7 of 5
8 Step 2 Add ingredients There are two ways to enter US Foods ingredients. You can search the product catalog or key in the product number. Search the product catalog. Enter the ingredient name in the search field. We are looking for a shredded mozzarella cheese to top our lasagna. Select search USF Product or Search My Lists, then click the green search icon. 2. The search results screen will appear. 3. The green checkmark in the OG column indicates this item is on our order guide 4. Select the product to add to the menu item by entering the qty and UOM. 5. 9 6. The product will be added to the menu item 7. The menu item detail screen will reappear with all of the calculated values updated 7 6 Key the Product Number Using Zip Add The second way of entering ingredients from the USF product catalog is to use the Zip Add feature.. Key the product number into the Product Number field. 2. Press the tab key. The product description will appear. 3. Enter the quantity and unit of measure. 4. 10 Continue adding USF Products to the menu item as shown below: Adding Non USF Products MPP allows the user to enter products purchased elsewhere. These products can then be used in recipes and menu items, similar to how USF products are used. We will add a parmesan cheese product sourced from another vendor into our Lasagna Platter menu item.. Within the Menu Item Detail, enter parmesan in the search window 2. Click the Non USF Product radio button 3. Click the green search icon The Search Non US Foods Products results are displayed. 5. Enter the desired quantity and unit of measure. 6. Click the Add to Menu Item button The parmesan cheese is now added to our menu item, and the cost updated to reflect the $.64 ingredient cost 7 For the exclusive use of US Foods customers and employees Page 0 of 5
11 Adding a Recipe to a Menu Item Most menu items use at least one recipe as an ingredient. In our Lasagna Dinner example, the lasagna itself will come from our completed recipe.. From within the Menu Item Detail, enter lasagna in the search window 2. Click the Recipe radio button to search recipes 3. Click the green search icon The search recipe screen is now displayed. 5. Enter the amount and unit of measure to be added to the menu item.* 6. Click the Add to Recipe button MPP displays the source of each ingredient in the Type column for easy identification of the ingredient origin. 7 For the exclusive use of US Foods customers and employees Page of 5
12 Step 3 Enter Instructions After all ingredients have been entered the user now enters instructions on menu item preparation.. On the Menu Item Detail screen, select the Menu Item Information tab. 2. Click the sub tab Menu Item Instructions. This will open the Instructions screen. 3. Click the Add Step button to add the first step This will open the Add Step dialog box. 5. Name the step, and enter the instructional text. 6. Click Save & New if you would like to enter another step, or Save and Close if you are finished entering steps The step and its instructions now appear in the recipe instructions portion of the screen. 7 For the exclusive use of US Foods customers and employees Page 2 of 5
13 MPP allows users to add a Critical Control Process (CCP) to any step. Users can select from standardized CCP s or create their own.. To use standardized CCP s, click on the Add CCP button within the desired step. 2. The Add CCP selection box appears 3. Select the desired CCP by clicking its checkbox 4. Click Add to insert the selected CCP into the instructional step The selected CCP now appears as part of this instructional step. 5 For the exclusive use of US Foods customers and employees Page 3 of 5
14 Step 4 Review Completed Menu Item It is important to always check the accuracy of any menu item after entering it into MPP. In general, the first areas to check involve the menu item cost, food cost %, gross profit, units of measure and ingredient costs. Also food cost should match the sum of all ingredient costs. Look for ingredient costs, quantity, and units of measure that appear out of line. For the exclusive use of US Foods customers and employees Page 4 of 5
