It brings together theoretical, practical and workplace elements of food preparation and service. This qualification also provides for a direct pathway from entry as a Kitchen-hand to qualifying as a Chef. The CEP felt that no matter where a Cook worked, they should be able to do the specific cooking related skills that the Employer requires from them. There are also many alternative titles to a Cook that could lead to varied job opportunities within the qualification. Since Cooks are the back bone of our industry, the CEP felt that there is a need to award a full qualification to the Cook, and not just a part-qualification. There are many Cooks who cannot afford the financial or time constraints it takes to complete the chef qualification and so we believed that by offering Cooks a full qualification, our industry will benefit by having more qualified people who are recognised and acknowledged for this qualification. Embedded within the qualification is a part qualification which will allow for a learner to work as a Kitchen-hand during their first year. A clear career pathway exists between cook and chef and once qualified as a cook, nothing will hinder the learner to study further for the chef qualification, even at a later stage. Once qualified as a Cook, and gaining sufficient working experience it might also lead to Occupational Certificate: Cook Page 2 of 9

3 promotion and further career advancement. This qualification will professionalise the industry and is applicable to all sectors of Professional Cookery. 5 Food production preparation in undertaken by weighing, measuring and selecting the quality and quantity of ingredients, as per recipe and dish specifications using Prep Lists, Ingredient Lists and Work Plans outlining the times, temperatures, techniques and methods to be followed. Food production components are stored correctly for later assembly and presentation through plating and garnishing. Staff work allocation is divided equally in accordance with the tasks required to be completed for maintaining food production. Exit Level Outcome 2 Communicate with and assist other kitchen personnel Associated Assessment Criteria Assistance and support are provided by kitchen personnel to maintain high levels of cleanliness, efficient food production, and to ensure all service requirements are met. Documenting stock levels and recording fridge and freezer temperatures is undertaken to ensure efficient and safe food production. Communicating and reporting on equipment maintenance issues, quality standards of ingredients and out-of-stock items is undertaken to ensure efficient food production. Exit Level Outcome 3 Prepare, cook and assemble specific food items using the correct method and techniques to meet customer and organisational requirements Associated Assessment Criteria Hot and Cold food items are prepared using various preparation techniques (including peeling, slicing, chopping, dicing). Food items are cooked using various cooking methods (including boiling, poaching, steaming, stewing, braising, roasting, grilling, baking, frying and microwaving). Food items are assembled and presented through plating and garnishing. Food quality and portion control are maintained and monitored through-out production and service to meet customer and organizational requirements. Exit Level Outcome 4 Assist kitchen and service staff to prepare and serve food, and clean food preparation and service areas Associated Assessment Criteria All designated areas and items are cleaned and all items are returned to the designated areas Sanitation, health and safety standards are maintained in work areas Occupational Certificate: Cook Page 5 of 9

6 Assistance and support are provided to kitchen personnel to maintain high levels of cleanliness, efficient food production, and to ensure all service requirements are met. Food items are assembled and presented in accordance with work instruction INTERNATIONAL COMPARABILITY This qualification has been developed for the hospitality industry and serves to standardise the chef industry. This qualification was compared to similar qualifications; some outcomes-based, in various countries: New Zealand, Malaysia, Hong Kong & India: In Malaysia & Hong Kong their chef qualifications are compared to the internationally recognized UK qualifications as these schools offer their learners the opportunity to obtain the UK based qualification and thus align their qualifications to it. In New Zealand an internationally recognized qualification is incorporated into a similar national qualification. United Kingdom: In the UK there are a range of Chef Qualifications which is also offered by various South African Training providers as an international award. There is an assortment of information available from other countries, however these countries mainly seem to offer shorter learning components and does not compare in terms of length or detail of content. Conclusions: The competencies covered in the various South African based qualifications i.e. Occupational Certificate: Chef are either similar or have substantial overlap with the UK based qualifications that has also been registered on the South African NQF i.e. National Certificate in Food Preparation and Cooking. It should be noted that this qualification is made up of the UK based International Vocational Qualifications (IVQ s). There are also skills awards that contain similar outcomes i.e. City & Guilds skills proficiency awards in basic food preparation: Skills foundation certificate, 3528 and City & Guilds skills proficiency awards in basic food preparation: Skills proficiency certificate, 3529 This Qualification enjoys significant similarity with the New Zealand qualification called the Certificate in Cookery (Level 3) as well as the Australian qualification called SIT20307 Certificate II in Hospitality (Kitchen Operations). World Association of Chefs Societies (WACS), of which SACA is a member, has partnered with City & Guilds internationally worldwide to award 9 professional titles. While termed WACS certified these certifications are more aligned to South African Designations than Qualifications Occupational Certificate: Cook Page 6 of 9

7 It should be noted that the majority of countries offering hospitality qualifications are utilizing the UK based qualifications and align their curriculum to those of City & Guilds. INTEGRATED ASSESSMENT INTEGRATED FORMATIVE ASSESSMENT The skills development provider will use the curriculum to guide them on the stipulated internal assessment criteria and weighting. They will also apply the scope of practical skills and applied knowledge as stipulated by the internal assessment criteria. This formative assessment leads to entrance to the integrated external summative assessment. INTEGRATED SUMMATIVE ASSESSMENT An external integrated summative assessment, conducted through the relevant QCTO Assessment Quality partner is required for the issuing of this qualification. The external integrated summative assessment will focus on the exit level outcomes and associated assessment criteria. The external assessment model requires that the external assessment will be conducted through a combination of a written assessment and practical task at an accredited assessment centre. The written examination will be concluded at an accredited assessment centre and marked by registered assessors. Practical tasks will also be assessed by registered assessors. The combination of the written and practical assessment will be conducted over a period of two working days. RECOGNITION OF PRIOR LEARNING RPL for access to the external integrated summative assessment: Accredited providers and approved workplaces must apply the internal assessment criteria specified in the related curriculum document to establish and confirm prior learning. Accredited providers and workplaces must confirm prior learning by issuing a statement of result or certifying a work experience record. RPL for access to the qualification: Accredited providers and approved workplaces may recognise prior learning against the relevant access requirements. ARTICULATION Feeder qualification will be a National Senior Certificate (NSC) with subjects such as consumer studies and hospitality studies Horizontal articulation is with a National Certificate (Vocational): Hospitality Vertical Articulation: Progressive career opportunities are related to OFO unit group , Chef or Chef de Partie (CDP) Other career opportunities are related to Sous Chef, Executive Chef, Training and Management positions in a range of Cook industries.
