Required Food Safety Training The State of South Dakota requires foodservice establishments to have at least one person on staff who has passed an 8-hour foodservice training and certification program. Recertification is required every 5 years. About the Food Safety Training Programs In all of these programs, you will learn why food safety is so important for your business and for your customers. You ll learn about time and temperature requirements, hygiene, sanitation, contamination and more. What Type of Class Do You Need? National ServSafe Certification / Recertification Choose a live or online class to get your first-time certification. These options may also be used when it s time to be recertified IF you want to maintain your national certification. Live class: Take an 8-hour ServSafe class and a test. Online: Prefer an online option? Go through the ServSafe course online at your convenience, then take a test with a certified ServSafe proctor. (This is a printed exam, and is not available online.) ServSafe test only: When you re being recertified, if you would like to keep your national ServSafe certification, you have the option of just taking the test at a regularly scheduled live class -orwith a ServSafe proctor. State Recertification Class If you have a current (unexpired) certification and are renewing it, you may choose this option. This is a live class only; it is not available online. 4-hour state program - no test: This provides a short refresher program with NO GRADED TEST. It is only valid in South Dakota. If you are being certified for the first time -or- if your certification has already expired, you MUST take the 8-hour ServSafe certification class and test. The 4-hour stateapproved class is one option for recertification. It s also a good class for people who just want some general food safety training. Certifications and recertifications are good for 5 years. Important Registration Notes Seating is limited, so SDRA will reserve a spot for you when we receive your payment. A textbook is required for the live ServSafe course. We ll send a textbook after we receive your payment. Register at least one week prior to the class to allow adequate time for the textbook to be mailed to you, so you can STUDY BEFORE THE CLASS. If you receive a passing score, you will receive a certificate via email within 7 to 10 days. ONLINE ServSafe Class & Proctored Test How It Works 1. Sign up for the online course. Call us at 800-658-5545. 2. Once you start the online course, you have 90 days to complete it. 3. After you complete the online course, print the Certificate of Completion. 4. Sign up to take a proctored test (this is a printed exam; the exam is not available online): You can take the test at a regularly-scheduled ServSafe class -OR- You may schedule a proctored test with a certified ServSafe proctor. Proctors are available in many areas of the state and at the SDRA office in Pierre. To find the proctor nearest you call us at 800-658-5545. Some franchises have contracts that require them to take the ServSafe recertification program and don t allow staff at those businesses to take the 4-hour state recertification.

A: If you have a foodservice or mobile foodservice license from the South Dakota Department of Health (DOH), you must have a certified person on staff. (Some temporary foodservice establishments are exempt.) Questions? Call DOH at 800-738-2301. Q: What is a passing score for the ServSafe test? A: You must receive a score of at least 75% to pass the ServSafe test. Q: How will I know if I passed the ServSafe test? A: EMAIL: Your test results will be emailed to you by the National Restaurant Association about 7 to 10 days after you take the test. MAIL: SDRA will send you a letter with your test score. ONLINE: You may also check online for results. Within 7 to 10 days after you take the test, your scores will be available to you online at www.nraef.org/classes. You must have the Class Number to check your score online. (The instructor will give you the Class Number the day of the class). Q: Once I pass the certification test, do I have to become recertified in the future? A: Yes. South Dakota requires recertification every five years. Q: How do I know when my certification expires? A: The expiration date appears on your certificate. If you were certified through our program, you may also call the South Dakota Department of Health (DOH) to check on the expiration date. Call DOH at 800-738-2301. Q: My business has just one ServSafe certified person on staff. If that person leaves, how long do we have to get another person certified? A: The State Food Service Code says when a certified food service manager leaves an establishment, the establishment has a 90-day grace period to obtain another certified food service manager. Q: I m opening a new restaurant. How soon must I have a person on my staff certified? A: You must have a certified person on staff prior to opening. Q: If I purchase an existing restaurant, how long do I have to get a person certified? A: Upon a change of ownership, a foodservice establishment has 90 days to have a person certified. Q: If I have been ServSafe certified in another state, is it valid in South Dakota? A: If your certificate has not expired, your national ServSafe certification from another state is valid in South Dakota. Q: What is the difference between ServSafe recertification and state-approved recertification? A: ServSafe certification and recertification is recognized on a national basis. The 4-hour state-approved recertification is strictly a South Dakota program. Some people who have received their national ServSafe certification want to keep that national certification when their original certificate is expiring. They can participate in the ServSafe training and test. Other people don t care if they maintain national certification; they just want to meet the state of South Dakota s requirements for recertification. For those people, the state has approved a 4-hour recertification program which does not involve a pass/fail test. It is instruction only, and attendees receive a Certificate of Completion at the conclusion. Q: The fees are lower for Retailers Association members. Are there other membership benefits? Recommended Alcohol Training Give your employees the skills they need to avoid making illegal sales. This training may reduce penalties for the business if an employee is caught selling alcohol to a minor. NEW IN 2016! ServSafe Alcohol Online Training Employees Who Sell or Serve Alcohol Can Self-Train We offer convenient online ServSafe Alcohol training to make sure getting your employees properly trained is as easy as possible. In South Dakota, the training is valid for 4 years. How it Works Your alcohol sellers and servers sit down at a computer and go through online training and testing. ServSafe Alcohol is a course designed for onsale businesses, but off-sale businesses may also use this program. Once an employee starts the program, they don t need to finish the entire program at one sitting. They can come and go as they have time until they complete the course at their own pace. The ServSafe Alcohol training includes a South Dakota Supplement that can be printed or downloaded. Why Alcohol Training is Recommended When a clerk or server is caught selling or serving alcohol to an underage customer in South Dakota, THE BUSINESS WILL BE FINED by the state. The fine can be as much as $1,000 on the first offense and $2,000 on the second offense, but the penalty is cut in half if the employee has been trained through a program approved by the South Dakota Department of Revenue. ServSafe Alcohol is an approved program. How to sign up and pay 1. Go to www.servsafe.com/ssaonline 2. Scroll down to view the map, then click on South Dakota. 3. Select SSA Online Course & Primary Exam. 4. Click Add to Shopping Cart. 5. If you are an SDRA member, you re entitled to 20% off the regular price. On the shopping cart page, in the coupon code field, enter the special member code then click on Apply Coupon Code. 6. Complete payment process. 7. You will receive a purchase confirmation email. It will include an Exam Access Code that you will need when taking the exam. NOTE: Exam access codes can only be used once and are non-refundable. To take the training 1. Under the Students tab, select Take Online Course. 2. Click Launch next to the ServSafe Alcohol Course. 3. At some point before, during or immediately after the training, be sure to click on the South Dakota Supplement link. Download or print the Supplement, and review the information. To take the exam 1. You must complete the course prior to taking the exam. 2. Under the Students tab, select Take Online Exam. 3. Select the South Dakota Alcohol Exam. 4. In the field provided, enter your Exam Access Code from your purchase confirmation email. 5. Click Continue to start your Exam. To access your exam scores 1. Under the Students tab, select Check Your Exam Score. 2. Click the Number next to your ServSafe Alcohol Course and Exam. 3. If you receive a passing score, you will receive a certificate via email.
