Demonstrates ability and knowledge to perform job Required by certain states Sought out by employers CMS Ruling CMS Regulations September 28, CMS issued final regulations CDM, CFPP credential now listed as the primary qualification for the Director of Food and Nutrition Services Representative from Food and Nutrition Services must be included on the Interdisciplinary Team (IDT). 6

As the leader of a large group of skilled nursing facilities, I have come to realize over the past 15 years the importance of having a well-qualified dietary manager at the helm of each of my dietary departments. I appreciate the range of decisions a Certified Dietary Manager must make, and how those decisions have a profound impact on the lives of our residents. 8 Qualifications Step 1: Become eligible to sit for the CDM Certification Exam by qualifying through one of the 5 exam eligibility pathways. Step 2: Pass the CDM Certification Exam Pathways of Eligibility Pathway 1 Candidates who have graduated from an ANFPapproved foodservice manager training program. A copy of the certificate of course completion is required, and the candidate s name must appear on the official graduate listing that is sent to ANFP by the college/school. 8

9 Pathways of Eligibility Pathway 2 Candidates who hold a two-year or four-year college degree in foodservice management or nutrition, culinary arts degree, or hotel-restaurant management degree. Candidates must have completed a minimum of one course in nutrition and two courses in foodservice management. A copy of transcripts must be submitted with exam application. Pathways of Eligibility Pathway 3 Graduates of a comprehensive 90-hour foodservice course curriculum, who also have two years of institutional foodservice management experience. Candidates must have completed a minimum of one course in nutrition and two courses in foodservice management. A copy of transcripts and certificate of course completion must be submitted, as well as employment information with exam application. 9

10 Pathways of Eligibility Pathway 4 Current and former members of the U.S. military who have graduated from an approved military foodservice manager training program and have attained the grade of E-5. Documentation of military training and pay grade must be submitted when applying under Pathway IV to determine eligibility. Pathways of Eligibility Pathway 5 Candidates who hold an alternate two-year, four-year or higher degree. Candidates must have a minimum of five years of institutional foodservice management experience, and must also complete one course in nutrition and two courses in foodservice management. A copy of transcripts as well as employment information must be submitted with exam application. 10
