3 Green screen Manager s Set-Up: Fryer NOT Pre-Programmed at Factory: On Off Turn Power Switch On Touch Resfab to continue Menus Screen appears Touch Cancel This will take you to menu #1 Touch Resfab Key Pad Screen Set-Up Screen #1 appears Touch LCD Contrast: Green Key Pad Displays. Adjust Contrast and Brightness. When screen is set, press ESC which takes you back to the Set-Up screen. Touch Temperature Reading: Choose between C Celsius & F Fahrenheit. Touch Idle 1 Temp: Set by Factory at 250 for slow times. This extends the life of the oil. To change touch number to lower or raise the temperature. Touch ENT. Touch Idle 2 Temp: Set for cleaning procedures Boil Out once weekly. TEMP SET AT FACTORY DO NOT CHANGE *Note: Boil Out can be programmed as a menu item: 30 Minutes at 200. This will be addressed again in Menu Programming. Touch Clock Setting: Green Key Pad Displays, Adjust day & time via arrows, touch set, touch escape which takes you back to Set-Up Screen Touch Next. 2

4 Manager s Set-Up: Fryer NOT Pre-Programmed at Factory: Set-Up Screen #2 appears SET OIL RECIRCULATION TIME: FRESH BREADED 65s MRB 45s SET NUMBER OF RECYCLING: FRESH OR MRB 2 Filter often for best quality of product & oil life. NOTE: Time will always over-ride # of frys. Under Oil Filtering Lock Out : Set the number of frys or time allowed before Oil Filtration is required: Fresh Breaded Chicken: after 3 loads recommended. MRB Chicken: after 5 loads recommended. If you choose Number of frys, you will need to enter the number and then enter 0 in the time box. Touch Number square: Number Pad Displays, Enter desired number, (Example 4) Touch Enter. Touch Time square: Number Pad Displays, Enter 0, Touch Enter If you choose Time, you will need to enter 0 in the number box. Touch Time square: Number Pad Displays, Enter number of minutes desired, (Example 240) Touch Enter. HIT NEXT: MENU #1 WILL APPEAR 3

5 Manager s Set-Up Continued: Fryer NOT Pre-Programmed at Factory: Programming Menu Display Screen 1: Touch Menu Name : Yellow Key Pad Appears: Type in product name..example: Chicken Wing (21 characters max.) Touch ENT. 2. Touch Cooking Time : You will touch left side for Minutes and right side for Seconds: Number Pad Appears: Enter Number, Touch ENT. 3. Touch Cooking Temperature : Yellow Number Pad Appears enter temp. touch ENT. 4. Touch Alarm At : Yellow Number Pad Appears: Set the alarm to go off 1 minute before the frying time is complete. Example: Cook Time 14 min. = Alarm 13 min. Touch ENT. 5. Touch Stir After : Yellow Number Pad Appears: Set amount of time into the cook cycle that you want to stir your product. Example: Cook time 14 min = Stir time 9 min. leaving 5 min. of cook time remaining. Touch ENT. 6. IF NEEDED: Add Product After : To cook two products in the same batch touch Add Product After and set number of minutes into the cycle that you want to add new product. Example: Corn Dogs Cook Time 13 min. Add Egg Rolls at 5 min. into cook cycle so that Egg Rolls will cook for 8 min. Touch ENT. 7. BOIL OUT: Program one of the menu items as Boil Out Set Cooking Temperature at 200, Set Cooking Time at 30 minutes: Stir 15 minutes. Alarm 28 minutes. Once all settings are completed for that menu touch SAVE CHANGE. Touch NEXT and next available menu number will appear. Start again with Step 1 and complete each step for each menu. When all menu items have been entered: Touch SAVE CHANGE then Touch DONE. NOTE: To move to different menus other than consecutively touch menu # and choose any menu number you wish to program or change. 4

6 Red screen Red screen Red screen Red screen Alarm Screens STIR: Screen will turn RED at set STIR time: Alarm sounds for 10 Seconds. Screen will return to COOKING. If programmed ADD PRODUCT: Screen will turn RED at set ADD PRODUCT time. Alarm sounds for 10 Seconds. Screen will return to COOKING. ALARM: Screen will turn RED at set ALARM time. Alarm sounds for 10 Seconds. Screen will return to COOKING. END COOKING CYCLE: When COOKING CYCLE is completed, screen will turn RED. Alarm sounds for 10 Seconds. Basket will lift. Manager s Pin: To add new Menu, change existing menu or over-ride filter warning. 4 digit code. NOTE: ANY TIME YOU TOUCH RESFAB AT THE TOP OF A SCREEN, YOU WILL GO TO THE RED WARNING: MANAGER PIN SCREEN. TO LEAVE THIS SCREEN, PRESS BACK. 5

7 Red screen Red screen Green screen Green screen Cooking Procedures On On Off Turn Power Switch On Touch Resfab to continue Menu Selection screen appears: Use PREV or NEXT to go thru menu, or if already in operation touch MENU to take you to the Menu Selection. Select Desired Menu: Touch Menu # or Name Example: Menu #1 Name: Chicken Wing Menu Appears: This will display the menu number and name. Oil Temperature, Cooking Temperature, and Cooking Time: Touch OK to confirm selection. Screen changes to Pre-Heat:. At this time prepare your product. STIR OIL VIGOROUSLY When oil reaches proper fry temperature, Screen changes to READY 15 CHICKEN WING MRB Product: Load product into basket in UP position. Touch START Fresh Product: Touch Basket to lower basket, add product and Touch Start Screen changes to: COOKING If you wish to raise the basket during cook sequence, touch the arrow timer countdown will stop. To return to cooking, touch the arrow and timer will resume countdown. Screen changes to STIR at preset stir time. Screen changes to ALARM at preset time (one minute before fry complete) to let deli staff know that product is almost 6 done.

8 Red screen Red screen Green screen Adjust Oil Level or Manual Filtration Procedures Adjust Oil Level From a menu item touch MENU in upper left corner of screen. MENU SELECTION screen will appear: In upper right hand corner, touch OIL LEVEL ADJUST box. Screen will turn GREEN: ALL VALVE CLOSE will display: TO READ OIL LEVEL: (oil level line on basket holder) LOWER BASKET HOLDER USING ARROW: ADD OIL AS REQUIRED: TOUCH RETURN TO MENU Manual Filtration Procedures Be sure filter pan is tightly in place. Add powder to oil or filter pan. Use pot brush to clean side and stir crumbs at bottom of kettle. Open drain valve (inside door handle on right.) Screen will reflect the drain valve is open. Continue brushing crumbs off coils. Brush all crumbs down drain with oil. Use drain brush (straight brush) should clog occur in drain hole. Switch (Red Rocker Switch) Filter Pump On: Oil will swirl into kettle to remove any remaining crumbs. To POLISH oil, run in this position for 4 to 7 minutes. Close drain valve. Screen will reflect When oil returning to kettle begins to bubble with air, wait 5 seconds to allow all oil to return to kettle. Switch (Red Rocker Switch) Filter Pump Off. Touch Return to Menu: This will take you back to the last menu item that you cooked. To continue with this item, Touch OK : To go back to Menu Selection, Touch Menu 7

Touch NEXT Remove Basket Be sure Oil is at least 200 Touch NEXT Check to be sure filter pan & paper are in place Touch NEXT Follow instructions..add FILTER POWDER to OIL PAN. *** Touch NEXT ***LEAVE THE DOOR OPEN SO ALL STAFF WILL KNOW THAT FILTERING PROCESS TAKING PLACE. 8

11 Red screen Program Menu Additions TO ADD A NEW MENU Go to MENU SELECTION SCREEN Touch CANCEL Menu Screen appears Touch RESFAB: RED warning screen will appear, Touch box, key pad will appear, enter manager s code. Touch ENT. Red Warning screen appears, Touch NEXT: Set-up Screen #1 appears, Touch NEXT. Set up Screen #2 appears, Touch NEXT Programming Menu Display Screen appears: Menu #1 Using the NEXT key proceed to an empty menu screen. Programming Menu Display Screen 1: Touch Menu Name : Key Pad Appears: Type in product name Touch ENT..Example: Fresh 8 pc. Chicken (21 characters max.) 2. Touch Cooking Time : You will touch left side for Minutes and right side for Seconds: Number Pad Appears: Enter Number, touch ENT. 3. Touch Cooking Temperature : Number Pad Appears enter temp. touch ENT. 4. Touch Alarm At : Number Pad Appears: Set the alarm to go off 1 minute before the frying time is complete. Set up Screen #2 appears, Touch NEXT Programming Menu Display Screen appears: Menu #1 Chosen Menu to be changed appears. Programming Menu Display Screen To change Product Name: Touch Menu Name : Key Pad Appears: Type in product name Touch ENT..Example: Fresh 8 pc. Chicken (21 characters max.) To change Cooking Time: Touch Cooking Time : You will touch left side for Minutes and right side for Seconds: Number Pad Appears: Enter Number, touch ENT. To change Cooking Temperature: Touch Cooking Temperature : Number Pad Appears enter temp. touch ENT. To change Alarm At: Touch Alarm At : Number Pad Appears: Set the alarm to go off 1 minute before the frying time is complete. Example: Cook Time 14 min. = Alarm 13 min. Touch ENT. To change Stir After: Touch Stir After : Number Pad Appears: Set amount of time into the cook cycle that you want to stir your product. Example: Cook time 14 min = Stir time 9 min. leaving 5 min. of cook time remaining. Touch ENT. 13 Boil Out Procedures Green screen Go to MENU SELECTION screen: Touch NEXT PAGE to scroll down to Boil Out menu. Touch Menu # or Description BOIL OUT Menu Confirmation Screen appears: Displays Menu #, Description, Current Oil Temperature, Cooking Temperature (should be 200 ), Cooking Time (should be 30 minutes): PLEASE READ THIS ENTIRE PROCEDURE PAGE BEFORE CONTINUING! BOIL OUT Remove basket: Open Drain Valve (on RIGHT) and dump oil into one of the following:. If oil is in good condition, dump into filter pan to use after boil out. Utilize the filter pan dolly handle to remove filter pan from fryer. If oil is to be disposed of, dump into filter pan, utilize the filter pan dolly handle to take oil to proper disposal location and clean filter pan. OR: Utilizing the Quick Disconnect Hose, Open Drain Valve (on RIGHT) and dump oil into filter pan. Close Drain Valve. Attach Quick Disconnect hose to fryer, Open Discharge Hose Valve (on LEFT), START Pump and drain oil into proper container for reuse or disposal as necessary. IF DUMPING OIL INTO ORIGINAL OIL PLASTIC CONTAINER OIL CANNOT BE HOTTER THAN 130 Remove filter pan from fryer utilizing the filter pan dolly handle after oil is pumped out and clean filter pan. (see instructions on page 8) Close Drain Valve. Fill pot with water to oil line. Remove basket holder and clean at sink. Touch Start Add Boil Out product per manufacturers directions. Use pot brush to clean coils and sides of pot. At end of 30 minutes, place a bucket under the drain hole in the center of pot. Open Drain Valve and dispose of water. Close valve and wipe inside of fry pot with paper towel to remove all water, including drain hole. If using oil in filter pan, replace filter pan tightly into fryer as soon as possible so that oil is still hot. Touch MENU, Touch Oil Level Adjust Touch Filter Pump and return oil to pot. Touch Filter Pump to turn pump off. Replace basket holder to see oil level; add oil as needed. Remove filter pan for cleaning: (see instructions on page 8) If using new oil, Touch MENU, Touch Oil Level Adjust, replace basket holder, fill with oil to oil level mark. NOTE: Creamy shortening will expand more than clear oil. Touch RETURN TO MENU proceed with menu selection. 12

14 Filter Pan Cleaning Procedures Remove empty filter pan from fryer to cool. Remove Hold Down Bracket to sink and wash with hot soapy water. Rinse thoroughly and dry thoroughly. Carefully Remove and dispose of Filter Paper. (Do not get crumbs in hole) Remove Screen to sink and wash with hot soapy water. Rinse & Dry thoroughly. DAILY: Wipe down inside of filter pan with paper towels. WEEKLY: Wash inside of filter pan (do not submerge) in hot soapy water. Rinse thoroughly. Place filter pan, upside down, on drain board to drain completely. DO NOT DROP. When all parts are completely dry (use paper towel to dry if time is prohibited): Reassemble Filter Pan: 1. Place SCREEN in the center of the bottom of Filter Pan. 2. Place FILTER PAPER completely flat and centered on top of Screen. 3. Place HOLD DOWN BRACKET squarely on top of filter paper. NOTE: If using a paperless filter, remove, disassemble, wash, rinse and air dry before putting it back into the filter pan. 13
