Introduction 9 Description In a restaurant, kitchen displays are used to communicate the customer orders to the kitchen staff for preparation. As the wait staff places the customer orders on the point-of-sale (POS) system, the orders are sent directly to the kitchen where they appear on monitors at the appropriate menu item preparation stations. The orders display in a first-in/first-out fashion in individual blocks on these monitors. The kitchen staff employee at each station is then responsible for preparing the menu item orders sent to his station. Once the preparation of the menu items on the customer order is finished, the order is marked as complete and removed (or bumped ) from the kitchen display screen. As each order is bumped from the screen, the remaining orders each move up one position on the screen and additional orders that were not able to be displayed due to the limitation of the available screen space are displayed at the end of the list of orders. The Aldelo Touch Kitchen Display Server software runs on Apple ipad devices that are placed at your various menu item preparation stations. It facilitates communication between those devices and your point-of-sale (POS) devices running the Aldelo Touch POS software. As your wait staff enters customer orders into their Aldelo Touch POS ipad devices, the orders are transmitted wirelessly to the Aldelo Touch Kitchen Display Server ipad devices and are placed in a virtual queue for preparation by your kitchen staff. Each order appears in an individual block on the ipad screen. The information displayed includes the order number, the order type, the employee who entered the order, the menu items and quantity of each ordered, and the elapsed time since the order was placed. This information is updated through the Aldelo Touch POS software. Upon completion of the order, the kitchen staff member bumps the order from the screen. An on-screen bump button is provided on each order displayed on the ipad kitchen display device screen to allow the kitchen staff member a minimum amount of control over what is visible on the screen. This manual is intended as a guide to performing the initial setup and operation of the Aldelo Touch Kitchen Display Server software with Aldelo Touch. Assumptions For the purposes of the installation and integration of these systems, certain assumptions are made as to your existing level of preparation. It is assumed that you have already downloaded the most recent version of the Aldelo Touch Kitchen Display Server software from the Apple App Store and installed it on all of your ipad kitchen display devices. It is further assumed that you have the following necessary hardware and software: One or more Apple ipad devices running the Aldelo Touch Kitchen Display Server (KDS) software to be used as kitchen display devices for displaying the entered orders to the kitchen staff A point-of-sale system and server computer running XERA POS An Ethernet capable router/access point with wireless capability that has the capacity to interconnect all of the hardware listed above The latest version of Aldelo End Point Services (EPS) custom installed to include the KDS LC End Point option Please see the following chapter (titled Requirements ) for additional information about the software and hardware required to setup the system.

Chapter 1 Requirements 11 Software Requirements The Aldelo Touch Kitchen Display Server (KDS) software drives the display of menu items and modifiers on each Apple ipad device that is being used as a kitchen display monitor. Aldelo has developed an interface between XERA POS and the Aldelo Touch KDS software, and between Aldelo Touch POS and the Aldelo Touch KDS software, that communicates wirelessly via TCP/IP. You must install the Aldelo Touch KDS software on each of your Apple ipad devices that is being used as a kitchen display monitor. Download the software from the Apple App Store and install it on your ipad devices following the same installation procedure as you would with any application downloaded from the App Store. In addition to the above, you must be running XERA POS or Aldelo Touch POS as your point-of-sale system so that the Aldelo Touch KDS software may communicate with it. Hardware Requirements Several hardware devices are required to run the kitchen display system.

12 An Apple ipad device is required at each kitchen preparation station where you wish to allow your staff to view the menu item orders that have been placed by your wait staff (See Figure 1-1). Figure 1-1 Additionally, a fully functional installation of XERA POS or Aldelo Touch POS must be running so that the Aldelo Touch KDS software may communicate with it. The hardware requirements for XERA POS and Aldelo Touch POS may vary according to your restaurant s type, size, and level of service. For information on the installation and operation of these two POS (point-of-sale) systems, please see the XERA POS User Manual and the XERA POS Manager Manual, or the Aldelo Touch User Manual.

Chapter 2 Setup 13 Software Installation and Setup The Aldelo Touch Kitchen Display Server requires the installation and setup of the Aldelo Touch Kitchen Display Server (KDS) software. This Aldelo software may be obtained from the Apple App Store. Microsoft.NET Framework 4.6 The Microsoft.NET Framework is a managed environment for the next generation of applications running on Microsoft Windows platforms. The components of the Aldelo Touch KDS End Point Service software are built entirely on the.net Framework. There are currently several.net Framework libraries. The Aldelo Touch KDS End Point Service software requires the.net Framework 4.6 version. You may install multiple versions of these frameworks on the same system at the same time. It is also important to keep up with the latest.net Framework service updates. As an installer, administrator, or user of the Aldelo Touch KDS End Point Service software, you do not need to understand the inner workings of the.net Framework. The only requirement is to ensure that the.net Framework is installed in the supported Windows operating system. Installation of the Aldelo Touch KDS End Point Service Software Install the Aldelo Touch KDS End Point Service software on any machine on the network, but preferably the server computer. The installation is straightforward and consistent with that of other products from Aldelo, LP. To begin the installation, load the Aldelo EPS installation file (AldeloTouchKDSEP10.exe) onto the computer onto which you wish to install it. Navigate to the location of the file on your computer and double-click it. The User Account Control window appears. Click the Yes button to continue.

Chapter 4 Integrating Aldelo Touch Kitchen Display Server with Aldelo Touch POS 57 Follow the steps below to integrate the Aldelo Touch Kitchen Display Server with Aldelo Touch POS. Aldelo POS Cloud Settings Integrating the Aldelo Touch Kitchen Display Server with Aldelo Touch POS requires the use of the Aldelo POS Cloud for XERA. Please contact your authorized Aldelo reseller or the Aldelo Sales Department to obtain the necessary credentials to activate your cloud account. An message will be sent to you. Check your account for the welcome message that is sent to you from Aldelo, LP. If you don t see it, check your spam folder. Open the message and read it thoroughly. To continue, please see the Aldelo POS Cloud for XERA User Guide for detailed instructions on activating your cloud account. Company Tab Settings Once your cloud account is active, open the Aldelo POS Cloud application in your web browser, navigate to Company Tab > Store Settings > Printing Settings and click the Edit button in the lower right portion of the screen. Click in the field to the right of the ipad KDS Server IP menu item. Enter the IP address of the computer upon which the Aldelo Touch KDS EP software is installed. Enter this information in the following format: xxx.xxx.xxx.xxx

58 where xxx.xxx.xxx.xxx is the IP address of the computer (See Figure 4-1). Figure 4-1 Next, click in the field to the right of the ipad KDS Server Port menu item and enter port number in this field (this is the default port number for this setting). Click the Save button in the lower right corner of the screen.

POS Tab Settings In the Aldelo POS Cloud, navigate to POS Tab > Device Types. Click the New button to display the Device Types [Add New Record] screen. Create a name for this device type and enter it into the POS Device Type Name field. Next, click the down arrow button to the right of the POS Device Type dropdown list and select POS Printer & KDS from the displayed list (See Figure 4-2). 59 Figure 4-2

60 Next, click the Settings Tab at the top of the Device Types window. Select the Use as Kitchen Display Instead of Printer checkbox and then click the Save button at the bottom of the screen (See Figure 4-3). Figure 4-3

Now navigate to POS Tab > Device Locations. Click the New button to display the Device Locations [Add New Record] screen. Create a name for this device location and enter it into the Device Location Name field. Next, click the down arrow button to the right of the Cost Center dropdown list and select the appropriate cost center for this device location by clicking on it in the displayed list (See Figure 4-4). 61 Figure 4-4

62 In the POS Device URL field, enter the station number of this KDS device. This number must match the number entered on the Setting screen of the respective KDS ipad device (described previously in this manual). Next, click the down arrow button to the right of the POS Device dropdown list and select the appropriate POS device for this location by clicking on it in the displayed list (See Figure 4-5). Figure 4-5 Click the Save button at the bottom of the screen.

Now navigate to POS Tab > Routing Definitions. Click the New button to display the Routing Definitions [Add New Record] screen. Create a name for this routing definition and enter it into the Routing Definition Name field. Click the Save button at the bottom of the screen (See Figure 4-6). 63 Figure 4-6

64 Next, click the Routings Tab at the top of the Routing Definitions window. Under the appropriate prep type, click the >>> Click to Show Available Device Locations >>> button to display the list of available device locations on the right side of the screen (See Figure 4-7). Figure 4-7 Scroll down the Available Device Locations list until you find the appropriate device location you created previously in the list. Under this device location entry in this list, double-click the <<< Double Click to Assign Device Locations <<< button. This moves the selected device location to the left side of the screen, beneath the selected prep type. Under the same prep type on the left side of the screen, click the >>> Click to Show Available Device Locations >>> button again to redisplay the list of available device locations on the right side of the screen. On the right side of the screen, scroll down the Available Device Locations list until you find Null Printer in the list. Under the Null Printer entry in this list, double-click the <<< Double Click to Assign Device Locations <<< button. This moves the Null Printer device location to the left side of the screen, beneath the selected prep type. Assigning the Null Printer device location to all prep types in this manner causes items that fail to print under this routing definition to still be marked as printed, thereby preventing undesired reprints. Click the Save button at the bottom of the screen.

Part 2 Operations 65

66

67 Chapter 5 Software & Hardware Operation Aldelo Touch POS Operation with the Aldelo Touch Kitchen Display Server The operation of the Aldelo Touch POS software when used with the Aldelo Touch Kitchen Display Server software is identical to that as when used without it. Orders are placed in the same manner only instead of being routed to a kitchen chit printer, the orders are routed to and appear on your ipad kitchen display devices. Voids are also handled as usual in Aldelo Touch POS when used with the Aldelo Touch Kitchen Display Server software. When you void an order, the order is removed from the screen of your ipad kitchen display device. If you void just one item, the item is removed from the screen. Hardware Operation Your ipad kitchen display devices should be mounted at each respective kitchen station so that they are out of the way of your preparation tables yet still in close enough proximity so that they may be easily viewed by your kitchen staff. If possible, mount the devices permanently and provide permanently attached chargers to each one of them so that they will never have to be removed for recharging. Try to select a location that is not affected by heat, steam, or grease. Putting some effort into selecting the best location for each device should help prolong the lives of your ipad kitchen display devices. Bump When an order that appears on the ipad kitchen display device is completed, it must be removed from the screen. To do so, click the Bump button that is displayed at the bottom of the listing of each order s menu items. The order is immediately removed from the screen and the remaining orders each shift one position to fill the void. The maximum number of orders visible on the screen at once is six; however, the remaining orders in the queue may be viewed by scrolling the screen upward. An unlimited number of orders may be waiting in the queue, but only six may be viewed on the screen at one time. History The History button allows the user to view the orders that have previously been completed and bumped. This button will recall and display all orders that were bumped on the current business day. Bumped orders from prior business days cannot be recalled. Click the History button to display the History screen and view the list of previously bumped orders. If necessary, the list may be scrolled to view any hidden orders. To exit the History screen and return to the main screen of orders, click the Back button in the upper-left corner of the screen. Un-Bump Whenever you wish to restore a previously bumped order to the display of current orders, navigate to the History screen and click the desired order s Un-Bump button. This button is located at the bottom of the

68 listing of each order s menu items. When this button is clicked, the order is immediately restored to the main screen of orders. Back Click the Back button anytime you are in the History screen and you wish to return to the main screen of the Aldelo Touch Kitchen Display Server. Setting Click the Setting button to adjust the user-accessible settings of the Aldelo Touch Kitchen Display Server software. The available settings appear in the column on the left side of the screen. Click the desired setting to make the necessary adjustments. Demo Mode Demo data is supplied with the Aldelo Touch Kitchen Display Server software so that the system may be used for training purposes without affecting the actual data from your business. This demo data may be manipulated in the same ways as your real data may be manipulated.

Enable Demo Mode Click the Demo Mode button whenever you wish to enable or disable Demo Mode on this ipad device. To enable Demo Mode, move the Demo Mode slide switch in the center of the screen to the right until its background displays in green. Demo Mode is now enabled (See Figure 5-1). 69 Figure 5-1 Restore Demo Data Demo data is supplied with the Aldelo Touch Kitchen Display Server software so that the system may be used for training purposes without affecting the actual data from your business. This demo data may be manipulated in the same ways as your real data may be manipulated. To restore the demo data, click the Restore Demo Data button on the Demo Mode screen. The demo data is immediately restored to its original state. De-Activate The De-Activate feature allows you to prevent users of this ipad device from manipulating your live data. Simply click the De-Activate button to do so. The device must be reactivated before it may again be used for live data manipulation.

70 Disable Demo Mode To disable Demo Mode, move the Demo Mode slide switch in the center of the screen to the left until its background displays in gray. Demo Mode is now disabled (See Figure 5-2). Figure 5-2 Touch KDS Server URL In this field, enter the URL (Uniform Resource Locator) of your Aldelo Touch KDS server computer. The URL must be entered in the following format: where xxx.xxx.xxx.xxx is the IP (Internet Protocol) address of the computer and is the default port number on which it communicates with the system. Please note that the and the : (colon) between the IP address and the port number are entered exactly as shown. User The User feature allows the selection of one of two user types: Line Cook or Expeditor. Each user type allows access to different user options. Select the user type that matches that of the employee who is using the ipad kitchen display device by clicking its respective button.

KDS Display Mode The Aldelo Touch Kitchen Display Server software allows two different modes of display: Traditional Mode and Consolidated Mode. Traditional Mode displays each customer order in an individual block on the screen (See Figure 5-3). 71 Figure 5-3 Traditional Mode

72 Consolidated Mode groups like items together and displays the number of each different menu item awaiting preparation. This allows the kitchen staff to prepare multiples of the same menu items at the same time without having to scroll through the orders in Traditional Mode and count the number of like items. Each unique menu item appears in a list preceded by the quantity awaiting preparation (See Figure 5-4). Figure 5-4 Consolidated Mode KDS Station Number Click the KDS Station Number button to display the station number selection screen. Select the station number from the list that corresponds with the desired station number as setup in the Aldelo POS Cloud application. For example, if you setup your appetizer station in the Aldelo POS Cloud application as POS Device URL number 1, then select the 1 button from the station number selection screen. KDS Display Layout The KDS Display Layout feature allows the user to customize the display format of the KDS screen while it is in Traditional Mode. Please note that this feature has no effect over the display format of the screen while it is in Consolidated Mode, as Consolidated Mode always displays the menu items in a list format. Please also note that while in Traditional mode, the selected screen layout only affects the screen while the device is held in landscape orientation. When the device is held in portrait orientation, the screen layout reverts to two columns

by three rows, no matter which display format has been selected by the user. Click the KDS Display Layout button to access the screen layout selection options. Select your desired layout by clicking on its respective button. 73 Alert When Timer Exceeds (Minutes) This feature allows the user to setup a visual reminder that activates when an order has exceeded a specific number of minutes since the order was entered into the system. Click the Alert When Timer Exceeds (Minutes) button to display the timer selection screen. Select the desired number of minutes by clicking on its respective button. Please note that the timer may be setup to display this visual reminder in whole minutes only. The user may choose any number of minutes between one and sixty, inclusive. When an order has its visual reminder active, the header of the order as displayed on the main screen flashes with a red background (See Figures 5-5 and 5-6). Figure 5-5 Alert Timer before Activation

74 Figure 5-6 Alert Timer after Activation Data Fetch Frequency (Seconds) A fetch transaction occurs when the Aldelo Touch Kitchen Display Server software polls the server to transmit any staged data that has been generated since the last fetch transaction. The user has the ability to determine the number of seconds he wishes to allow to elapse between each fetch transaction. The available selections are between fifteen and ninety seconds, inclusive, in increments of fifteen seconds each. Click the Data Fetch Frequency (Seconds) button to display the selection screen. Select the desired number of seconds to allow between fetch transactions by clicking on the respective button. A longer period of time between fetches minimizes the system down times while the fetches are in progress; however, it also causes any new or changed orders to take longer to be submitted to the kitchen. Conversely, a shorter period of time between fetches causes any new or changed orders to be submitted to the kitchen more quickly; however, it increases the system down times while the fetches are in progress. Sync Recipe Data Whenever you add recipes, delete recipes, or make changes to any of your recipes, click the Sync Recipe Data button to update the information to your ipad kitchen display devices.

Done Click the Done button anytime you are in the Setting screen and you wish to return to the main screen of the Aldelo Touch Kitchen Display Server. This button is typically used when you have completed editing your settings. 75 Screen Elements The main screen of the Aldelo Touch Kitchen Display Server displays the orders that have been placed by your staff on the POS system. The following figure and its accompanying legend identify each of the elements on this main screen (See Figure 5-7). Figure 5-7
