7 7 Chapter 1 Introduction Description In a restaurant, kitchen displays are used to communicate the customer orders to the kitchen staff for preparation. As the wait staff places the customer orders on the point of sale (POS) system, the orders are sent directly to the kitchen where they appear on monitors at the appropriate menu item preparation stations. The orders display in a first-in/first-out fashion in individual blocks on these monitors. The kitchen staff employee at each station is then responsible for preparing the menu item orders sent to his station. Once the preparation of the menu items on the customer order is finished, the order is marked as complete and removed (or bumped ) from the kitchen display screen. As each order is bumped from the screen, the remaining orders each move up one position on the screen and additional orders that were not able to be displayed due to the limitation of the available screen space are displayed at the end of the list of orders. The Aldelo Kitchen Display Server software facilitates communication between Aldelo POS and the display monitors in your restaurant s kitchen. As your wait staff enters customer orders into Aldelo POS, the orders are placed in the queue for preparation by your kitchen staff. Each order appears in an individual block on the monitor screen. The information displayed may include the order number, the order type, the table number (if applicable), the menu items and quantity of each ordered, the elapsed time since the order was placed, the station number, and the ticket number. This information is updated through Aldelo POS. Upon completion of the order, the kitchen staff member bumps the order from the screen. A bump bar is provided with each kitchen display monitor to allow the kitchen staff member a minimum amount of control over what is visible on the monitor. This manual is intended as a guide to performing the initial setup of the Aldelo Kitchen Display Server software with Aldelo POS. Assumptions For the purposes of the installation and integration of these systems, certain assumptions are made as to your existing level of preparation. It is assumed that you have already installed the most recent version of Aldelo POS, activated it, installed all of the latest updates, and fully tested the software to verify that it is working properly. It is further assumed that you have the following necessary hardware and software: One or more VGA monitors capable of 640 X 480 resolution or greater One or More Logic Controls LS6100 Units (one per monitor) One or More Logic Controls KB1700 Bump Bars (options A or B: one per monitor) An Ethernet capable router, hub, or switch that has the capacity to interconnect all of the hardware listed above Logic Controls Kitchen Command Platform (KCP) Manager software installed Please see Chapter 1 (titled Requirements ) for additional information about the software and hardware required to setup the system.

11 11 Chapter 2 Requirements Software Requirements The Aldelo Kitchen Display Server (KDS) software drives the display of menu items and modifiers on each of the kitchen display monitors. With the help of the Logic Controls Kitchen Command Platform (KCP) Manager software, Aldelo has developed an interface between Aldelo POS and the Logic Controls LS6100 unit. The system communicates via TCP/IP between Aldelo POS and Aldelo KDS, as well as between Aldelo KDS and the Logic Controls hardware and software. You may install the Aldelo Kitchen Display Server software on any computer on the network; however, the recommended place to install it is on the server that holds the Aldelo POS database. This computer is usually more powerful than the rest. Installing it there also groups all databases together on the same system. Hardware Requirements Several devices make up the kitchen display system. The devices listed below are from the Logic Controls Logic Net family of kitchen display hardware. The LS6100 series control module unit is responsible for controlling communications between the Aldelo Kitchen Display Server and the kitchen monitors (See Figure 2-1). The Aldelo Kitchen Display Server supports the Ethernet connections of the unit. The control unit IP address can be configured using the Logic Controls KCP Manager software. Figure 2-1 The LS6100 units drive the monitors to display text. Each monitor must be connected to an LS6100 unit. Each LS6100 unit is assigned a station number. This number may be changed in the KCP Manager.

12 12 The KB1700 series bump bars (See Figure 2-2) control moving or bumping orders, recalling orders, and showing a summary of items. These units are configured using a utility from Logic Controls. Aldelo KDS supports bump bar button layout options A and B only. These layouts may be viewed at: Figure 2-2

13 13 Chapter 3 Setup Hardware Installation and Setup The LS6100 unit comes with both serial and Ethernet interfaces. The Aldelo Kitchen Display Server works only with the Ethernet interface. Planning System Configurations The proper configuration for the hardware connections is displayed in the figure below (See Figure 3-1). Connect each of your LS6100 devices and the server computer to an Ethernet switch so that they may communicate. Next, connect a monitor and a bump bar to each of your LS6100 units. CAT5 cable should be used to make these connections. Figure 3-1

14 14 Mounting the LS6100 Unit Mounting brackets are provided to facilitate mounting the LS6100 unit to a horizontal or vertical surface. If wall anchors are required, the installer should use wall anchors that have the capacity to support 4.3 kg (9.5 lb.). Wall anchors that specify weight capacity are available commercially. Mounting the Bump Bar A mounting bracket comes with each bump bar. This mounting bracket allows the bump bar to be installed beneath a shelf, on top of a shelf, or to stand freely on rubber feet. For best results, Aldelo recommends attaching the bump bar permanently to a shelf or other horizontal surface to prevent it from moving around when its buttons are pressed. Excessive movement could cause some of the electrical connections to fail. LS6100 Installation & Setup Make sure that power to all equipment is turned off before making your connections. Making connections while power is on may cause damage to the system. After placing the system components and cabling in your desired locations, setup each LS6100 using the following procedure: Attach the monitor, bump bar, and power supply to the LS6100 unit. Plug the monitor and the LS6100 power supply into an AC power source with surge protection and turn on the power to the monitor. Reset the LS6100 by pressing the reset button on the front panel with a pointed device (such as a paper clip). After pressing the reset button, within 5 seconds, press the down arrow button on the bump bar to navigate to the Setup Screen menu. Setup the Station Address under the Main Tab as follows: o Select the Station Address option from the menu by using the down arrow key. o Select the assigned, unique, station address in the range between 0 and 15, inclusive, by using the 0 and 1 keys on the bump bar to scroll the value forward or backward. o When finished, press the CTRL and keys on the bump bar to save the settings and exit the Setup Screen. o Verify that the address you entered now appears in the Station Address field of the banner message box. Setup the IP Address under the Ethernet Tab as follows: o From the Main Tab of the Setup Screen, press the right arrow button on the bump bar to move to the Ethernet Tab. o By default, the first octet of the IP address is selected. If you need to change the value in this field, enter the new value by using the 0 through 9 keys on the bump bar. Please note that it is not necessary to enter any leading zeroes. o To move to the next octet, press the key on the bump bar. Enter the new value as described above. o Continue in this manner until all four octets contain the correct values for the IP address. o Please note that it is not necessary to change the settings for the Subnet Mask or the TCP Port. Leave these settings at their default values. o Please also note that the MAC (Media Access Control) Address is a fixed value and is not editable. When finished, press the CTRL and keys on the bump bar to save the settings and exit the Setup Screen. Setup is now complete for the LS6100 unit. Repeat the procedure above for each LS6100 unit in the system. Be sure to use unique address values for each unit. Always verify your input in the banner message box when you are finished.

15 15 Software Installation and Setup Aldelo Kitchen Display Server Software Install the Aldelo Kitchen Display Server software on any machine in the network, but preferably, the server computer. The installation is straightforward and consistent with that of other products from Aldelo, LP. To begin, make sure you have the latest version of the Aldelo POS software installed on your system (this is usually installed on your server computer). Next, open the Control Panel on the computer on which Aldelo POS is installed and click the Programs and Features menu item (See Figure 3-2). Figure 3-2

16 16 Next, select Aldelo POS from the program list by clicking on it in the list and then click the Change button near the top of the screen (See Figure 3-3). Figure 3-3

17 17 When the InstallShield Wizard window displays, click the Next button (See Figure 3-4). Figure 3-4 On the Program Maintenance window, select the Modify radio button and then click the Next button to continue (See Figure 3-5). Figure 3-5

18 18 On the Custom Setup window, click the down arrow button to the left of the Aldelo Kitchen Display Server menu item, select the submenu option to install the feature and all of its subfeatures, and then click the Next button to continue (See Figure 3-6). Figure 3-6

19 19 When the Ready to Modify the Program window displays, check the Current Settings group box to make sure all the information is correct, then click the Install button (See Figure 3-7). 20 20 Once the Aldelo Kitchen Display Server is installed, launch the software for the first time. The software prompts you to enter the product serial number. To get started with the application immediately and open it in demo mode, simply ignore the message. The software will shut down every 30 minutes until you activate it. This allows you to activate the software at your convenience. When you wish to activate the software, contact the Aldelo Support Department for assistance. Logic Controls Kitchen Command Platform Manager Software The Logic Controls Kitchen Command Platform (KCP) Manager software facilitates communication between the Aldelo KDS software and the LS6100 units. The KCP Manager software is provided by Bematech. The KCP Manager software may be downloaded directly from the Bematech website at Once there, navigate to Kitchen Display Systems > LS6100/LS6100 > Drivers & Utilities and then double-click on the KCP Manager option. Download the.zip file to your computer desktop and extract the files. If desired, the KCPManager.exe file may be installed and executed from another Windows computer on the same network. Open the KCP Manager software by double-clicking on the file on your desktop. When the Open File-Security Warning window appears, click the Run button to continue (See Figure 3-9). 21 21 In the KCP Manager, navigate to Setting Tab > IP -> LS# to open the IP Setting window (See Figure 3-11). Figure 3-11 In the LM3000 IP field of the IP Setting window, enter the IP address of the computer on which the KCP Manager and Aldelo KDS are installed (See Figure 3-12). Figure 3-12

22 22 Next, in the IP Address field that corresponds with the station address number assigned to the LS6100 unit, enter the IP address of your LS6100 unit (See Figure 3-13). Figure 3-13 Enter the rest of your stations in the fields that correspond with their respective station numbers. When you have entered all of them, click the Save & Exit button to return to the KCP Manager main screen (See Figure 3-14). Figure 3-14

23 23 The green icons on the main screen that correspond with the stations you just setup now appear in a lighter green color, signifying that the setup was successful (See Figure 3-15). Figure 3-15 Aldelo Kitchen Display Server Run Tab When the Aldelo Kitchen Display Server starts, the Run Tab displays the current statistics for the system on which the software is running (See Figure 3-16). The information displayed includes the Kitchen Display Server IP/Port (which is the IP address and port number of system currently running the Aldelo Kitchen Display Server) and the Kitchen Control Unit IP/Port (which is the IP address and port number of system current running the KCP Manager). 24 24 Next, open Aldelo POS and navigate to Back Office > Store Settings > Other Tab. Scroll down to the middle of the Additional Options list. Enter the IP address recorded previously into the Setting Value column of the Aldelo Kitchen Display Server IP Address field. Next, enter the port number into the Setting Value column of the Aldelo Kitchen Display Server IP Port field. When complete, click the Save and Done buttons to save the changes and exit the Store Settings feature (See Figure 3-17). Figure 3-17

25 25 Next, in Aldelo POS, navigate to Back Office > Station Settings > Printer Tab > Kitchen/Bar Tab. Under the Kitchen Tab, select the No Printer Attached option in the Printer dropdown list for each kitchen printer listed under the first column where you wish to rout the information to a kitchen display monitor instead of to a kitchen printer. If necessary, perform the same steps under the Bar Tab to setup a bar display monitor. Click the Save and Done buttons to save your changes and exit the Station Settings feature (See Figure 3-18). 26 26 The Connected Clients field displays the Aldelo POS systems currently connected to the Aldelo Kitchen Display Server software (See Figure 3-19). The IP address and port number of each system displays. As each system connects, it is added to the list. Figure 3-19

27 27 Report Tab The Report Tab displays a report that shows information about your customers orders. For each order, the report displays the time the order was placed, the time the order was bumped from the screen (if applicable), the number of minutes it took to process the order (if applicable), the order number, the name of the server who placed the order, and the monitor on which the order was displayed (See Figure 3-20). To enter a date range for which to view the data, enter the From and To dates in their respective fields, then click the Go button. Figure 3-20

28 28 Setup Tab The following sections refer to the buttons found under the Setup Tab of the Aldelo Kitchen Display Server software (See Figure 3-21). Figure 3-21

29 29 Server Setup To setup the Aldelo Kitchen Display Server to communicate with the Logic Controls LS6100 unit, setup the IP address of the LS6100 unit as discussed previously in the section titled LS6100 Installation & Setup. Once you have the IP Address setup correctly in the LS6100 unit, click the Server Setup button under the Setup Tab in the Aldelo Kitchen Display Server. Update the Control Unit IP Address field to match the IP address of the computer on which the Logic Controls KCP Manager software is installed. Enter 3000 in the Control Unit IP Port field (See Figure 3-22). Figure 3-22 If necessary, you may also change the port number on which the Aldelo Kitchen Display Server communicates with Aldelo POS. This is done in the Server IP Port field. If you change this port number, you must also change the port number configuration in Aldelo POS as described previously. When finished, click the Done button to return to the Setup Tab of the main screen of the Aldelo Kitchen Display Server.

30 30 Kitchen Monitors Next, click the Kitchen Monitors button under the Setup Tab of the Aldelo Kitchen Display Server main screen. In the Kitchen Monitors window, a list of kitchen monitors appears on the left side (See Figure 3-23). For each monitor in the list, you can customize the colors that represent each item listed. The Orders Shown dropdown list allows the user to choose whether to display, two, four, or eight orders per monitor. The default number is eight. The Preparation Time Limit/Mins field allows the user to enter the number of minutes allowed to elapse before a displayed order begins flashing because it has taken too long to complete. Figure 3-23

31 31 Database Maintenance There are two options on the Database Maintenance screen: Purge Database and Backup Database (See Figure 3-24). The Purge Database button allows you to delete old transactions in the database when they are no longer needed. These are transactions that have already been completed and no longer need to be tracked. The Backup Database button creates a copy of your current database and prompts you to choose a location for storing the file. Figure 3-24

32 32 Order Routing In the Order Routings window, you may direct the flow of menu items and orders to the correct monitors depending on the type of order and the kitchen printer to which the order prints (See Figure 3-25). For example, in Figure 3-25 below, if a Dine In menu item is sent to Kitchen Printer 1, it displays on Kitchen Monitor 00 (the sixteen monitors are numbered from 00 to 15). This location may be changed by expanding the dropdown list and selecting the desired monitor. Each different order type may be displayed on a different monitor in the same manner. You may also elect to show the table number, show the station number, show the ticket, and show the order type by selecting the checkboxes below the dropdown list boxes. Figure 3-25

33 33 Users The Users screen allows you to create security for the Kitchen Display Server software (See Figure 3-26). Users may be assigned the following permissions: Allow View Setup Allow View Report Allow Shut Down Once logged in, you can lock the interface so that nobody can tamper with the software. Note: When logging in with a user account, usernames and passwords are case sensitive. Figure 3-26

34 34 View Log This screen shows each transaction as it is sent to the system. 39 39 Chapter 4 Software & Hardware Operation Software Operation When you place orders in Aldelo POS, the items you send to the kitchen display on the kitchen monitors. There is an option to expedite the sending of items to the kitchen with the Print Kitchen/Bar Items on the Fly option in Aldelo POS. To set this up, navigate to Back Office > Store Settings > Print Tab > Kitchen/Bar Tab. Select the Print Kitchen / Bar Item on the Fly checkbox to enable this option (See Figure 4-1). Figure 4-1 Voids are handled as usual. When you void an order in Aldelo POS, the order is removed from the kitchen display monitor screen. If you void just one item in Aldelo POS, the individual item is removed from the kitchen display monitor screen.

40 40 Hardware Operation The buttons on the KB1700 option A layout are used to provide functionality for managing orders (See Figure 4-2). These buttons are as follows: Bump Recall Sum Page (not used) Up Arrow Down Arrow 0 9 Redraw Bump Recall Sum Page (not used) Up Arrow Down Arrow 0-9 Redraw Figure 4-2 Bump When an order displayed on the kitchen monitor is completed, it must be removed from the screen. Highlight the order number by using the numbered buttons (when highlighted, the order title bar changes color). Press the Bump button to remove the order from the screen. This remaining orders shift to allow room for additional new orders. The maximum number of accessible orders is eight. An unlimited number of orders may be waiting in the queue, but only eight may be viewed on the screen at one time. Recall The Recall button allows the user to re-display the most recent order that was bumped off. This button will only recall the most recent order, and cannot be used to recall an order prior to the last one removed from the screen. Sum Pressing the Sum button displays the summary panel. The summary panel displays a summary of all common items and how many are currently in the queue. For example, if you have a hotdog on each order, the summary displays eight hotdogs, since there are eight orders per screen. Up and Down Arrows The Up and Down arrows are used to navigate through the summary panel. If there are more items than can be displayed in the summary panel at one time, use the arrows to scroll up and down the list.

41 41 Redraw This button refreshes the screen and shows any changes that may have occurred. This also occurs automatically.
